Having seen the video, I think it is a logging machine, rather than a mechanical logger. The former would move and stack the logs, while the latter would cut the stems into smaller logs, which seems not to be part of the process.

Explanation:
Given that this is the first step in the process, prior to "trancheuse", it presumably refers to the transformation of a raw tree trunk into a log (poutre). This requires removal of the bark, and (especially if the veneer is to be taken with a peeler) the clean log must be turned (on a large lathe, basically) so it is properly straight and cylindrical.

it’s clear that "poutreuse" is not a "debarking machine", because at 00:30 of the video we can see the banana trunks being debarked by hand, with a machete.

There's a step in the process – not shown in the video – between the irregularly-shaped (approximately round) "debarked" trunks on the truck at 00:46 and the "poutres" (+/- rectangular cross-section) seen at 01:04. There is presumably a machine that does this transformation. That will be the "poutreuse". No idea what that would be called in English!

neutral  Jennifer Levey: Not convinced. The main purpose of the “poutreuse” is to take the roughly cylindrical, pre-stripped “logs” (the “rondins” seen on the truck) and reduce them to approximately square-section “poutres”, primarily composed of compact heartwood.

  -> We now have the info that it's the first machine in the "ligne de transformation", which does support your argument. The "poutres" aren't "beams" and banana stems are not "wood". Perhaps a square core cutter?
