Arabic to English Art/Literary Poetry & Literature

Hi everyone,

I'm working on a Libyan text, and in this scene we are in a bakery.

I wanted to check if this means 'to let it rise calmly'?
I don't really get how هدوء works in this sentence with the dough, as I usually thought it to mean calmly, or quietly.

"ويدع العجين لينتفخ بهدوء..."
