One must consider the dynamic state of the body proteins, that is, the constant need to synthesize proteins having a short half-life. This synthesis must be accommodated by the catabolism of tissue protein - a catabolic process unlikely to occur extensively if good-quality proteins are consumed. Because this overestimation of endogenous loss is more serious with proteins of poor quality, inconsistent biological values are obtained. Raw protein
I think the "proteina grezza" is best translated with "Raw Protein"
unrefined protein gives the idea but is not as widely used as raw protein even if it is not wrong.
