i though it was some unit for washing the equipment, but then it is also mentioned in the text as "Bruchwaschwasserbereitung" and "Bruchwaschwasser Pasteurisierer mit Tank, vormontiert auf Gestell".

As far as I can tell, "Käsebruch" is "curd" (for the process, see: http://www.lebensmittellexikon.de/index.html?http://www.lebe... ).

according to the discussion at the link below, (spanish-german), Bruchwaschwasser is the same as Molke (whey)
