I was thinking "gluten block," for Kleberbaustein (and there are some English examples that seem to fit the context, although not many), but with the word "Gluten" following on its heels, it would be a bit redundant. Is this just a case of a redundancy in the source text that can be done away with in the target?

It sounds like gluten is a component of something that acts like an adhesive/glue.
